Breakfast Cheesecake 1 cup ricotta cheese 1/2 cup coconut flour Sweetener = to 3/4 cup sugar 4 tsps lemon juice 4 eggs, separated 1 tspn vanilla extract 375 Grease 9 x 9 pan. In med bowl cheese,flour,sweetener,lemon juice,egg yolks,vanilla. other bowl, mix high speed, beat egg whites stiff peaks. same beaters, beat cheese mixture smooth. fold egg whites into cheese mixture thoroughly combined.Bake 20 mins, or til edges brown and pick inserted comes out clean.
