Slow Roast Leg of Lamb Recipe
5hr · 1 serving Slow cooked leg of lamb recipe: 2 kg leg of lamb bone in • Drizzle of olive oil • Generous amount of sea salt • Some cracked pepper (about 1/2 tbsp) • 2 tbsp oregano • 1/2 tbsp Rosemary • 1/2 cup lemon juice • 2 cups Chicken stock 5-6 garlic cloves In a baking pan add the leg of lamb and drizzle olive oil, salt, back pepper, oregano, rosemary and rub them well in both sides. Make in incisions throughout the lamb then slot garlic cloves, tucking them in. Add lemon juice and chicken stock. Cover the lamb well with parchment paper then the entire pan with foil. Make sure it’s tightly sealed. Cook the lamb in 320F for 4 hours then remove the parchment and foil papers and cook for another 30 minutes to get a nice brown caramelized exterior texture.
