Vinha d’Alhos Loco Moco - This recipe is a mix of old family info and my customization. The traditional Portuguese name for the meat portion is Vinha d’Alhos which is very similar to Pork Adobo but dryer. My version creates more sauce at the end. ROKOMOKO (LOCO MOCO) - Rokomoko is more widely written as loco moco, which consists of white rice topped with a hamburger patty, a fried egg, & brown gravy. Popular Hawaiian dish that can be found at just about any fast food joint, roadside diner, mom & pop restaurant or lunch wagon in the Islands. There are many people who claim to have invented the dish, but it is generally agreed that the first loco moco was created in Hilo, Hawaii around 1949, either by the Cafe 100 or the Lincoln Grill.
HEALTHIER CURRY LOCO MOCO - So I never really ate a loco moco growing up in Hawaii because it just seemed like a cholesterol killer with all the starch and the protein-plus from the beef and egg. Also, I never took afternoon naps and undoubtedly a nap is required if you ate a whole bowl of loco moco. Still, recently I was thinking of a loco moco (I think it was the extra eggs and ground meat I had), and thought I could make it even more loco if I replaced the brown gravy with curry. #locomoco

KIM CHEE LUMPIA - This is a similar recipe to how I like making my basic lumpia. It's pretty much the same thing without the Kim chew and hot sauce. The long rice gives it a nice texture and makes it stand out over typical won ton style. The dipping sauce can be a wide variety as well which makes this nice to. Best of all takes a little time to prepare and you can double batch and freeze for your next party or emergency appetizers.
