Chicken Enchiladas with Chipotle Sour Cream Sauce- I made these last night. They were so so. The sauce was not spicy and I added another chipotle pepper. The enchiladas were not spicy either, need to add more jalapeno. All in all, I found this recipe boring and doubt I will make it again. The Ro*tel tomatoes should have been a tip off. I believe in using the purest ingredients when cooking, and just like fire roasted, canned, tomato products, with no added ingredients or preservatives.
