Veggie Slice  Ingredients:  1 zucchini, thinly sliced 1 sweet potato, thinly sliced 1 large onion, thinly diced 6 eggs, beaten 2 cloves garlic, crushed 1 tbs mixed herbs 1tbs olive oil Method: Heat oil in pan. Add garlic & opinion & brown. Add mixed herbs. Remove. Add sliced veggies to pan and cook just until tender. Line a small pie tin with layers of sliced veggies, onion mix and beaten egg. Bake in oven on medium until cooked through and slightly crisp around edges. Enjoy!

Grilled Zucchini Pizza - 9-25-13  I made this for hubs and me last night after the kids went to bed so we could have a low-carb treat. I ended up cutting the ends off my zucchinis, slicing off the outer edge on two sides to allow for flat slices, and then cut each zucchini into three lengthwise slices and broiled until softened.  I then added the toppings and broiled again to get the cheese bubbly.  YUM!

Vegetable pizza  1) roast some veggies, you can basically choose any veggies you like, i used: broccoli, carrots, tomatos, zucchini  2) put some yoghurt on your wrap and then put your veggies on top.  3) add some mozzerella cheese and avocado (optional)  4) put it the wrap in the oven uzntil the cheese is lightly melted and the edges if the wrap turn dark.  5) enjoy your super healthy, super yummy pizza!
