Citrus Couscous Salad! 3 oz arugula, 1/3 c chopped red onion, 5 oz dried cherries, 1 can mandarin oranges, 9 oz box Israeli Couscous, cooked, cooled, and lightly salted, 1.5 lbs of diced, cooked chicken seasoned with salt, pepper, and lemon to taste (optional) Dressing: -1/4 c white vinegar, 1/2 c olive oil, 1/3 cup fresh OJ, 3 Tbsp lemon juice, s&p, garlic powder. Combine all salad ingredients. Mix in the dressing and refrigerate for 2-3 hours to allow dressing to soak in.
