Emeril's Essence Creole Seasoning
This is my favorite Creole (Cajun) seasoning!!! This is great to encrust a large roast (prime rib), but for a blackened steak or something smaller I would cut back on the cayenne in the recipe to encrust it, or only sprinkle it on with the full amount or it will burn everyone's lips off.. :-) Speaking from experience. Lol.
