Eat Drink And Be Me: Mofongos - Mofongo de Pollo Guisado (a mofongo stuffed with savory chicken stew and bell peppers)

Ingredients (4 portions): -4 green peppers -4 chicken breasts or ground beef -4 spoons of cream cheese -3 spoons apio (in pieces) or cooked white rice. -1 spoon diced onion -1 spoon parsley -½ cup shredded cheese Instructions: Clean peppers and take off top and seeds. Prepare chicken breasts or meat for "guisado". When chicken or meat is ready add cream cheese. Mix rest of ingredients. Put all ingredients inside the peppers and cover with shredded cheese. Bake at 175C 30 min.
