Ohhhh!When this recipe arrived in my email early today...well...nothing would do for me but to "test" it this evening. It looked so much like corn casserole I remember from Cramer and Hanover Church of Christ suppers as a child...and using Jiffy cornbread mix made it very fast. BIG FIVE Stars...everyone loved it to pieces. No left-overs..great side for a simple Roast Chicken supper w/green salad.
per Marcia: Here you go with my spoon bread ... you might need to double for your house Mix together: 1 Pack of Jiffy Corn Muffin Mix Dry 1 can cream style corn 2 oz diced peppers... I sometimes use chopped chili's 1/2 pint of sour cream 2 eggs beaten Pour into a 9 x 13 greased pan and top with grated cheese... Bake 350 degrees 35-40 minutes..
