1 lg cucumber,4 oz shredded chicken,dice 1/2 tomato, Cilantro,Garlic,Onion powder and paprika to taste. Frank’s Hot Sauce. Peel the cucumber and cut into 4 equal sections.Remove the pulp halfway through each cup. Do not scoop all the way through. In a small bowl, combine chicken, tomato, cilantro, seasonings and hot sauce. Spoon mixture into cucumber cups. 1 veggie, 1 protein serving. On P3 add cottage cheese to your chicken salad mixture!
