Cheesy Kale Chips. LOVE them, but HATE that a small bag costs a fortune! This is my FAVORITE cheesy kale recipe. To really streamline the process, I pre-soak and freeze a large batch of raw cashews, so that I always have some ready for when I want to make this recipe.
I had vegan "cheesy" kale chips at a vegan raw foods restaurant in Dallas, Texas. Since then, I have been wandering the earth in search of the recipe. I have seen similar looking items sold in small packages for $6-8 a teeny weeny bag... But I couldn't legitimize the spending!
Spicy and Cheesy Kale Chips Ingredients: 1 1/2 bunches of kale, washed, dried, stems removed and torn into medium sized pieces 1 cup cashews, soaked for 2 hours 2-3 T lemon juice 2 T nutritional yeast 1/4 cup red bell pepper 1 t ground chipotle chili pepper 1/2 t of pink Himalayan sea salt (from Trader Joe’s) pinch of cayenne pepper
