I find by not soaking the beans they have better texture and flavor.I use Great Northern Beans as my favorite choice of bean for this recipe. Instant Pot Navy Bean Soup (Dry Beans Version) I used: 1 c onion, 3T chopped garlic, 2T butter, a handful of cherry tomatoes, 1/2 a breakfast ham steak (leftover), a bag of navy beans, 3 carrots, 2 stalks of celery,3quarts ham stock. I cooked 1c of quinoa the usual way and added that too to make it extra hearty.
