Nigerian Fried rice is a very simple yet delicious dish.This version relies on a ton of frwsh vegetables,beef liver and a little bit of oil for crisping it up which is made in different versions like ham fried rice, coconut fried rice and shrimp fried rice which is loaded with various spices.

Chicken fried rice! Cut chicken into pieces (I did 1.5lb and seasoned with salt and pepper) brown on saute in soy sauce and evoo, I don't measure... Add 2 eggs and scramble, add 1.5 cups frozen mixed veggies, 2 cups rice, 2 cups chicken broth and cook on rice function, 8 min natural release. Too easy and SO good. I did add more soy sauce at the end...
