Focaccia:
This is a 90% hydration dough - 100:90:2:1 - Flour: Water: Salt: Yeast. 

• 500g AP Flour
• 450g Water (40°C) (90%)
• 10g Salt (2%)
• 5g Active Dry Yeast (1%)
• 2 tbsp Gochujang Drizzle
• 1 finely sliced & washed Spring Onion
• Lots of Olive Oil to finish
• Flakey Salt to finish
• Sesame Seeds

Gochujang Drizzle:
• 2 tbsp Gochujang
• 1 tbsp Sesame Oil
• 2 tbsp Honey
• 2 tbsp Extra Virgin Olive Oil

1. Combine yeast with water in a large bowl and allow to bloom. Add flour & salt and bring together to form a shaggy dough.
2. Cover and rest for 30 minutes. Your dough should have roughly doubled in size - if not, your yeast is likely cactus.
3. Combine your gochujang, sesame oil, olive oil & honey.
4. Add fi Flour Water Salt Yeast, Onion Focaccia, Flakey Salt, Active Dry Yeast, Spring Onion, Virgin Olive Oil, Sesame Oil, Dry Yeast, Extra Virgin
