Whole Wheat Bread 1 1/4 cup warm water 1 Tblsp and 1 tsp active dry yeast 1/4 cup honey or 1/3 cup brown sugar 3 cups whole wheat flour (or combination white/wheat) 1/4 cup wheat gluten 2 Tblsp nonfat non instant dry milk 1 Tblsp butter/oil/shortening 1 Tblsp vinegar 1/4 cup potato flakes or 1 Tblsp potato pearls 1/2 cup oatmeal 1 tsp salt Mix in mixer with dough hook attachment for 10 minutes. It is a soft dough. Let rise, covered, until double, 1- 1 1/2 hours. Flatten on oiled countertop and shape into loaf or rolls. Spray and oil pans and let rise, covered, until double and bake 375 degrees for 25-28 minutes until golden brown and sounds hollow when lightly tapped. Cover with a foil tent the last 5-10 minutes if it starts to get too brown, which happens if you are using sugar. Adapted from Everydayfoodstorage.net
