Adding in salsa really makes a difference and enhances flavour! Try it! Make sure to grease the pan well so the eggs don't stick, or feel free to use silicon Pan/ paper muffin cups! # Sweet Potato, Broccoli, and Bacon Egg Muffins @Bucknakedpaleo # Ingredients: 2 Tbsp avocado oil/or ghee 9 eggs 2 Tbsp compliant coconut milk 2-3 Tbsp compliant Salsa of choice (I like Neal's Brothers Salsa) 6 slices compliant bacon, cooked till crispy 1 small sweet potato, peeled and shredded (approx.1 ½ cups shredded) 1 small bunch broccoli florets, chopped small (approx. 1 cup) pinch salt and black pepper # Method PREHEAT oven to 400 degrees and prepare a 12 cup non-stick muffin tin by lightly greasing each well using 1 Tbsp of the coconut or avocado oil. IN a bowl, whisk together eggs, coconut milk, salsa, and a pinch of salt and pepper. Set aside. ADD remaining tbsp of oil to a medium size skillet over medium heat, cook the shredded sweet potato and broccoli until soft (about 5 minutes). season with salt and pepper. IN the muffin pan, layer the softened shredded sweet potato and broccoli, cooked bacon, and top with the egg mixture. Repeat to make 12 egg muffins. I like to give each a little mix to make sure everything is distributed nicely. BAKE in the preheated oven for 10-15 minutes or until set, and the tops should be slightly browned. Bison is very lean yet still very high in protein, high in energizing B-complex vitamins, and is a great source of iron and zinc. Studies have shown that bison has the same amount of omega 3's as wild caught salmon per serving! Pretty cool. For the tomato sauce, I buy a locally made brand called "Deb's". As for spaghetti squash, cook it your favourite way! I like to cut mine in half, seed it, and throw it in an instant pot for 6 minutes with a cup of water. Or you can roast it with a drizzle of olive oil and salt and pepper until fork tender! # Bison Meatballs with Spaghetti Squash & Tomato Sauce @Bucknakedpaleo # What you will need: 1 Small Spaghetti squash, steamed or roasted. Bison meatballs (recipe below) Compliant Marinara/tomato sauce of choice (or Make your own homemade!) 1 small bunch Fresh Basil Nutritional yeast for sprinkling # For the Meatballs-makes 12 medium sized: 1 Tbsp ghee/ or olive oil 1/2 small onion, finely chopped 3 cloves garlic, minced 1 Pound Ground Bison (or can use beef) 1 egg 1 tsp dried oregano 1 tsp dried basil 1 Tbsp coconut flour 1/2 tsp salt 1/2 tsp pepper # Method: PREHEAT oven to 375 degrees. It's super tasty and I know a lot of you already got your hands on it (it's on my website). So good on roasted chicken, used as a dip with raw veggies, sweet potato fries, and of course all the salads like the one pictured (spinach, orange, snap peas, cucumber, red pepper, hemp hearts, black sesame seeds) ! You can even use it to marinate chicken or shrimp! Marinate for couple hours -> throw em on the grill->done! It cools me down when my apartment is unbearably hot (16th floor..no AC..) and is super healing and anti-inflammatory! I was first introduced to this golden milk by my friend Joy over at @Joyoushealth! She's amazing and has the hot version of the recipe on her website so make sure to check her out ! I like to stir in a scoop of collagen peptides (I use the brand Progressive) afterwards for some added benefits but that's optional! I use thinner nut milks but if you want to use coconut milk? Soooo heavenly! Just make sure to really thin it out with water first! # Iced Golden Milk @Bucknakedpaleo # Ingredients: 1/2 cup filtered water 1/2 Tsp turmeric powder (or 1 inch piece of fresh turmeric) Pinch ground cinnamon 1/4 Teaspoon ground ginger (or 1/2 inch piece of fresh ginger) 1 tbsp coconut butter (I use @nutiva. It's little sweeter than coconut oil as it is just puréed coconut. and doesn't clump together when poured over ice) 1 cup Ice (or more) 1.5 Cups compliant milk of choice (I use almond, hemp, or cashew milk) # Method: ADD water, turmeric, ginger, cinnamon, and coconut butter to blender and blend! STRAIN mixture through fine mesh strainer if you used fresh turmeric/ginger (unless you don't mind the Fibres in your drink) if you used powder, no straining necessary! We use chicken thighs, but use any cut you'd like! I like to add some steamed cauliflower rice(it soaks up the sauce and is so good),but that's optional! You can have the dish all on its own too and it's very filling! We are a garlic loving family so, we add a whopping 6 cloves.. sometimes even more. feel free to tailor the amount of garlic to your taste. Don't like mushrooms? change up the veggies! Snap peas, green beans, carrot, sweet potato instead of white potato. Endless options, Make it your own! :) # Mom's chicken curry with potatoes, red pepper and mushrooms @Bucknakedpaleo Serves 4 # Ingredients 2 Tbsp extra virgin olive oil/ or avocado oil 8 chicken thighs-bone in, skin on 1 medium onion, chopped 6 cloves garlic, minced 3 Tbsp yellow curry powder 1 tsp ground turmeric 2 tsp ground cumin 1 tsp ground coriander (optional) 1 lb baby potatoes, halved. (or 4-5 medium sized potatoes, cubed) 1 cup compliant chicken broth (I use homemade) 1-400ml can compliant coconut milk 10-12 small white button mushrooms, chopped 1 red bell pepper, chopped salt and pepper to taste fresh cilantro (optional) red pepper flakes (optional) # Method: IN a large saucepan, heat oil on medium-high heat. BROWN chicken thighs on both sides. TO the pan, add onion and cook until translucent (about 5-7 mins) ADD garlic and spices and cook until fragrant. turn the heat down to medium. ADD chopped baby potatoes, and cover with chicken broth and coconut milk. Stir to combine everything, and let simmer for about 15 minutes. ADD chopped mushrooms and red pepper to the pot and continue to cook for an additional 10-15 minutes. SEASON with salt and pepper to your liking.
