Two boneless chuck roast around three pounds each. Apply rub to both sides place in aluminum pan, (just to save on clean up) and place in smoker. 225 degrees until internal temp of 190 degrees. Pull from smoker and let rest for 30 minutes. Cut them into 1 1/2 to 2" cubes. Back in pan and coat in your favorite sauce. Stir with spoon to coat all four sides of each piece. Apply rub again and stir in sauce. Place back in smoke at 250 degrees until sauce starts to Carmelize on top 1 to 1 1/2
