Lemonades girl scout cookie copycat- these were a good lemon shortbread cookie! Not exactly like the girl scout ones, but close enough. They were easy to make considering they're cutout cookies. I really like the addition of lemon extract in addition to zest. Next time I might just try making these in a pan, bar form and drizzle icing over them. Will make again!
