Potato Skins recipe! A classic! Filled with cheddar cheese, bacon, sour cream, and green onions! These are always a hit at football parties!
For those of you in Raleigh, I modeled these after the potato skins from TriBeCa tavern. I cooked chicken thighs in the crockpot with BBQ sauce for 5hours on low. I cooked the potatoes in the microwave for 5mins per potato. I cut them in half, scooped out the middle, sprayed with olive oil, and cooked for 10 mins. Top with the BBQ, add a slice of pepper jack cheese, and melt. These are amazing. Love them! Great party food! (BBQ Potato Skins)
