Southwestern Chicken Stir-Fry... aka fajitas with a twist. I use whole wheat tortillas or make as taco salad on greens. It's also fun to take whole wheat tortillas, coat lightly with cooking oil spray and mold into large salad bowls. Bake them in the oven at 375 until crispy. Let cool, and use as a fun, healthy shell for taco salads.
