Olive oil and sea salt focaccia with mortadella! A classic Italian snack I used to prepare for all of the farm workers when I lived in Southern Tuscany  For the focaccia place 350g of tipo O flour 1 tsp of sea salt 1 tsp of sugar a generous lug of Extra virgin olive oil and 7g of dried yeast in a large bowl of a mixer with a dough hook attachment. With the mixer on low slowly add 200 or so ml of luke warm water until the dough comes together (you might not need all the water). Mix for a few…
