A classic Italian snack I used to prepare for all of the farm workers when I lived in Southern Tuscany For the focaccia place 350g of tipo O flour 1 tsp of sea salt 1 tsp of sugar a generous lug of Extra virgin olive oil and 7g of dried yeast in a large bowl of a mixer with a dough hook attachment.
