In the hills of Modena in Northern Italy, unripe green walnuts are collected between the midsummer solstice and the Feast of Saint John (June 24) to make nocino, a traditional liqueur. The green walnuts are steeped in spirit, then a sugar syrup with spices like cinnamon and cloves is added. During the Middle Ages, Italian monasteries used nocino not only as a liqueur but for its medicinal properties.
