  • 1 10-pound whole beef brisket, whole

  • 1 Bay leaf
  • 3 Fennel, bulbs
  • 10 Garlic cloves
  • 8 Onions, medium
  • 2 tbsp Sage, dried
  • 2 tbsp Thyme, dried
Canned Goods
  • 2 cups Beef stock or low-sodium broth
  • 1 cup Tomato puree
Baking & Spices
  • 2 tbsp Paprika, sweet
  • 1 tbsp Pepper, freshly ground
  • 1 tsp Peppercorns, black
  • 1 tbsp Sea salt, fine
Oils & Vinegars
  • 1 cup Banyuls vinegar or aged red wine vinegar
  • 1/4 cup Grapeseed oil
