A friend made this using Captain Morgan Spiced Run in the batter, and milk, instead of water, and it made a richer and more robust cake than using the ingredients called for in the original Bacardi Rum cake. We also used Appletons Estate Rum in the glaze. We did not use Bacardi Rum at all.
