Sottocenere...with my weakness for truffled cheese, this was a must-try.  It is incredibly delicious.  Not only is it laced with truffles, but it is coated in a mixture of spices (nutmeg, coriander, cinnamon, and more) that make the flavor even more complex.  The paste is creamy and silky.  I could never get tired of this cheese.
