These "McMuffins" resemble the McDonald's breakfast sandwich, but don't use English muffins. Instead, the sandwich is encased in egg rounds (made easy with the use of biscuit cutters!

Meal prep this week includes... Breakfast roasted japanese sweet potatoes, sautéed kale/spinach, scrambled eggs, and chorizo. Lunch Roasted red potatoes, grilled organic chicken thighs, roasted brussel sprouts. Will also have a serving of avocado. Ready for the week
