Avocado, Watermelon, & Cucumber Salad 2 avocados, pitted and sliced or cubed 1 seedless watermelon, cut into 1 inch cubes 2 cucumbers, peeled and cut into 1 inch cubes 2 tablespoons fresh lime juice 1 tablespoon olive oil 1/3 cup freshly chopped cilantro salt and pepper to taste
Vanilla coconut overnight oats 1 dl rolled oats 1 dl soy/oat milk 1 dl natural/soy yoghurt 1/2 tsp dried vanilla powder 1/2 tsp cinnamon 1 tsp honey/maple syrup tiny pinch of sea salt optional: 1 tbsp protein powder (I used coconut flavored) also optional: 1 tsp chia seeds for serving: fresh fruit & coconut flakes 1. Mix the oats, the liquid, the yoghurt, spices and seeds together in the evening. Put in the fridge overnight.
