A lovechild of muffins and croissants, cruffins are flaky, extravagant morning treats worth all the effort. Cruffins are a tedious but fun project. This cruffin recipe uses a combination of my cheater’s croissant dough, a popover pan for height, and a mix of ingenious rolling methods from across the interweb. This combination of croissant and muffin makes for a tall, flaky, extravagant morning bun. For the best flavor, let the cruffins rise overnight in the refrigerator.

• ¾ cup [150 g] granulated sugar, plus more for sprinkling in the pans and coating the cruffins
• All-purpose flour, for dusting
• 1 recipe Cheater's Croissant Dough
• 1 vanilla bean
• 1 cup [240 g] whole milk
• 1 cup [240 g] heavy cream
• 5 egg yolks, at room temperature
• 1¼ cups [250 g] granulated sugar
• ¼ tsp. salt
• ¼ cup [35 g] cornstarch
• 1 Tbsp. unsalted butter
• 2 tsp. pure vanilla extract
