Ingredients:
• 3 strips of bacon
• 3 large scallops
• 1 tablespoon butter
• Parsley, to garnish
Instructions:
• Heat a saute pan on medium heat. Add bacon and cook until done but not crispy, about 4 to 5 minutes.
• Remove from pan onto a paper towel-lined plate.
• Roll each scallop in a strip of bacon and use a toothpick to hold the bacon in place.
• Add butter to the same saute pan and cook scallops until browned, about 2 minutes on each side. Tilt pan and baste with butter.
• Remove from heat and garnish with parsley.
