So whether you want to do the full prep now or break it up as you go along, future you will probably be grateful. 🙃 Inspired by a video I watched earlier this year by @rainbowplantlife. This prep is designed to get you 5 meals for 2-3 people (if you only have 2 use the third serving for leftovers). I wrote a full guide with recipes for how to prep everything. I’ll shred some crispy tofu into my rice and use it as a helpful protein addition to pair with classic things like roasted chickpeas. And if you’re not into tofu, try it with roasted lentils (that’s my other go to). 😌 Protein Rice 1 cup short grain white rice, rinsed well 1/2 block super firm tofu 1/2 tbsp cornstarch 1/2 tbsp soy sauce 1/2 tbsp hoisin sauce 1/2 tbsp avocado oil Crispy Chickpeas 1, 15 oz can chickpeas, drained and rinsed 1 tbsp oil 1 tsp smoked paprika 1/2 tsp ground coriander 1/2 tsp garlic powder 1/2 tsp onion powder Mango Avocado Salad 2 ataulfo mangos, cubed 1 medium avocado, cubed 1 jalapeno, seeds removed and finely diced
